This week we are featuring Pork Tenderloin – on sale – $3.99 per pound.

Fresh pork is a flavourful white meat, high in protein and vitamin B, and surprisingly low in fat, which can sometimes make pork dry and tasteless. According to the Fannie Farmer Cookbook, tenderloin is best roasted or barbecued. To add extra flavour, we have discovered two tasty and delicious options – one marinade – from dear old Mom and one rub – from Dave, one of our prized meat cutters!!

Combine above ingredients in a jar.
Cover tightly and shake until well blended.
Pork should marinade for at least 2 hours.
Keep unused marinade in refrigerator, tightly sealed.

Roast pork 450 degrees for 15 minutes
Turn down to 325 degrees until internal temperature reaches 160 degrees.
Unused rub may be kept, tightly sealed.
